Here is a delicious and easy Yellow Squash and Onions recipe that I make often in the Summer months. Preheat oven to 375° F. Grease an oven-proof casserole dish. Half a small onion (cut into thin rings) 5-7 medium sized yellow squash (thinly sliced) 1/2 stick margerine 1/2 tsp. salt 1/2 tsp. black pepper 1 cup (about 18) saltine crackers, crushed (not crumbs) to top.  Place sliced onions and squash into a well greased casserole dish. Cube small bits 1/2 stick of margerine over the top and salt/pepper. Place in oven and allow to bake for 30 minutes or until squash softens a bit. Top with crushed crackers and place back into oven for 10 minutes. A great side dish~
