Unstuffed Pepper Casserole is a thrifty and filling dish that is perfect for a cozy dinner.
One cup rice cooked (yields 2 cups)
Breakfast sausage crumbled and browned
Green pepper diced
Half a sweet onion diced
3 tablespoons butter
Black pepper
Garlic powder
Smoked paprika
Seasoned salt
2 small cans Tomato sauce
Mozzarella or cheese of choice topping
Cook rice on stovetop.
Use a large skillet to melt butter. Add diced pepper and onion. Season with pepper, season salt, garlic powder and paprika ,let cook until lightly browned.
Add one lb breakfast sausage crumbled to skillet and brown with peppers and onions.
Preheat oven to 350
Layer a greased glass baking dish with 1 can of tomato sauce and half of cooked rice.
Then add your pepper, onion browned sausage. Layer the rest of rice and second can of tomato sauce. Top with lots of shredded cheese. (Mozzarella, cheddar, or Parmesan) we mixed all three!
Bake for 25 minutes in oven to melt cheese.
Pairs well with garlic bread.
Great for leftovers or will feed a family of 6.
